  1. Season a boneless pork shoulder roast generously with salt, pepper, garlic powder, onion powder, and dried herbs; then sear all sides in a hot pan.
  2. Transfer the seared pork to a roasting pan with chicken or pork broth at the bottom and roast in a preheated oven at 160°C (325°F) for 3-4 hours until tender.
  3. While the pork roasts, trim and clean the broccoli rabe; sauté minced garlic in olive oil, then add the broccoli rabe and cook until tender, seasoning with salt and pepper.
  4. Once the pork is cooked, let it rest, then thinly slice it; keep the pan drippings for au jus, skimming off excess fat.
  5. Split the Italian hoagie roll lengthwise, pile high with the sliced roast pork, top with sautéed broccoli rabe, and lay slices of sharp provolone cheese over the filling.
  6. Place the assembled sandwich under a broiler or in a hot oven for a few minutes until the cheese is melted and bubbly, then drizzle with warm au jus from the roasting pan.
