Sate Klatak

👨🍳 Instructions
- Cut the young goat meat into uniform cubes, approximately 2-3 cm in size, removing any excess fat.
- Pound garlic and shallots into a fine paste, then mix this paste with the meat, white pepper powder, and salt. Marinate for at least 15 minutes.
- Thread the seasoned meat onto large iron skewers or bicycle spokes, leaving small gaps between pieces for even cooking.
- Heat a charcoal grill until the coals are glowing hot and covered with a fine layer of ash, indicating even heat.
- Brush the skewers lightly with vegetable oil and place them directly over the hot coals. Grill for 10-15 minutes, turning frequently, until the meat is cooked through and slightly charred.
- Remove the Sate Klatak from the grill and serve immediately with a portion of cooked plain rice and a side of sweet soy sauce (Kecap Manis) for dipping.
