Scallion Oil Noodles

- Chinese Wheat Noodles 80 g · 296 kcal
- Scallions 50 g · 15 kcal
- Neutral Vegetable Oil 30 g · 270 kcal
- Light Soy Sauce 20 g · 15 kcal
- Dark Soy Sauce 5 g · 4 kcal
👨🍳 Instructions
- Prepare the scallions by separating the white and green parts; slice the white parts into 1-inch segments and the green parts into 2-inch segments.
- Cook the Chinese wheat noodles according to package directions until al dente; drain thoroughly and rinse briefly with cold water to prevent sticking, then set aside.
- Heat the neutral vegetable oil in a wok or large pan over medium-low heat. Add the white parts of the scallions and fry slowly until fragrant and golden brown, about 5-7 minutes.
- Add the green parts of the scallions to the oil and continue to fry until they are crispy, about 2-3 minutes. Carefully remove all the crispy scallion bits from the oil with a slotted spoon and set aside; keep the fragrant scallion oil in the pan.
- In a small bowl, whisk together the light soy sauce, dark soy sauce, and sugar to create the sauce base.
- Add the drained noodles and the prepared sauce to the pan with the fragrant scallion oil. Ensure the heat is off or very low.
- Toss well to coat the noodles evenly with the sauce. Serve immediately, garnished with the reserved crispy scallion bits.
