👨🍳 Instructions
- Cook rice noodles according to package directions until al dente; drain and rinse with cold water to prevent sticking, then set aside.
- Heat half of the peanut oil in a wok or large pan over medium-high heat. Add minced pork and cook until browned, breaking it up with a spoon.
- Add minced garlic and grated ginger to the pork; cook for 1-2 minutes until fragrant. Stir in gluten-free soy sauce, fish sauce, sesame oil, and granulated sugar.
- Remove the meat mixture from the pan and set aside. In the same pan, add the remaining peanut oil and chili flakes/powder; cook briefly to create chili oil.
- Divide the cooked noodles into serving bowls. Top each with the prepared meat sauce, a drizzle of the chili oil, and a squeeze of lime juice.
- Garnish generously with crushed peanuts, pickled mustard greens, sliced spring onion, and fresh cilantro before serving immediately.
