👨‍🍳 Instructions

  1. Cut the lamb shoulder into 3-4 cm (1.2-1.6 inch) cubes and slice the onions into thick rings.
  2. In a large bowl, combine the lamb, onions, white wine vinegar, black pepper, bay leaves, and salt; mix thoroughly to coat all meat pieces.
  3. Cover the bowl and marinate in the refrigerator for at least 4 hours, or preferably overnight.
  4. Thread the marinated lamb cubes onto skewers, alternating with onion rings if desired; do not pack too tightly.
  5. Preheat a grill or charcoal mangal to medium-high heat and grill the shashlik for 15-20 minutes, turning frequently.
  6. Cook until the lamb is beautifully browned on all sides and cooked through to your preferred doneness.
  7. Remove from grill and let rest for a few minutes before serving with fresh herbs, lavash, or a side salad.
