- Pork shoulder, boneless 250 g · 325 kcal
- Onions 150 g · 60 kcal
- White wine vinegar 30 g · 5 kcal
- Black pepper, ground 1 g · 0 kcal
- Bay leaves 1 g · 0 kcal
👨🍳 Instructions
- Cut the pork shoulder into 3-4 cm (1.2-1.6 inch) cubes and slice half of the onions into thick rings. Place the pork and onion rings in a large bowl.
- Add salt, black pepper, bay leaves, and white wine vinegar to the bowl. Mix thoroughly with your hands, squeezing the onions to release their juice.
- Cover the bowl and marinate in the refrigerator for at least 4-6 hours, or preferably overnight.
- Thread the marinated pork cubes onto skewers, alternating with the onion rings. Do not pack them too tightly.
- Preheat a grill or charcoal mangal to medium-high heat. Grill the shashlik for 15-25 minutes, turning frequently, until the pork is cooked through and nicely charred.
- Serve the hot shashlik immediately with fresh herbs, sliced raw onions, and a side of lavash or fresh bread.
