  • Pork shoulder, boneless 250 g · 325 kcal
  • Onions 150 g · 60 kcal
  • White wine vinegar 30 g · 5 kcal
  • Black pepper, ground 1 g · 0 kcal
  • Bay leaves 1 g · 0 kcal

👨‍🍳 Instructions

  1. Cut the pork shoulder into 3-4 cm (1.2-1.6 inch) cubes and slice half of the onions into thick rings. Place the pork and onion rings in a large bowl.
  2. Add salt, black pepper, bay leaves, and white wine vinegar to the bowl. Mix thoroughly with your hands, squeezing the onions to release their juice.
  3. Cover the bowl and marinate in the refrigerator for at least 4-6 hours, or preferably overnight.
  4. Thread the marinated pork cubes onto skewers, alternating with the onion rings. Do not pack them too tightly.
  5. Preheat a grill or charcoal mangal to medium-high heat. Grill the shashlik for 15-25 minutes, turning frequently, until the pork is cooked through and nicely charred.
  6. Serve the hot shashlik immediately with fresh herbs, sliced raw onions, and a side of lavash or fresh bread.
