👨‍🍳 Instructions

  1. In a large bowl, combine ground beef, finely chopped onion, uncooked rice, and half of the chopped parsley; season with salt and pepper. Mix thoroughly and form into small, oblong or round meatballs.
  2. Heat olive oil in a large pot or Dutch oven over medium heat. Add tomato paste and sauté for 2-3 minutes until fragrant.
  3. Pour in the vegetable broth and bring to a gentle simmer. Carefully add the prepared meatballs to the simmering broth.
  4. Reduce heat to low, cover, and simmer for 35-40 minutes, or until the rice in the meatballs is cooked and the flavors have melded. Stir occasionally.
  5. Garnish with the remaining fresh parsley and serve hot.
