- Lean Ground Beef (85/15) 400 g · 1000 kcal
- Onion 100 g · 40 kcal
- Short-grain Rice, uncooked 60 g · 216 kcal
- Fresh Parsley, chopped 15 g · 6 kcal
- Tomato Paste 30 g · 24 kcal
- Vegetable Broth 700 g · 28 kcal
- Olive Oil 20 g · 180 kcal
👨🍳 Instructions
- In a large bowl, combine ground beef, finely chopped onion, uncooked rice, and half of the chopped parsley; season with salt and pepper. Mix thoroughly and form into small, oblong or round meatballs.
- Heat olive oil in a large pot or Dutch oven over medium heat. Add tomato paste and sauté for 2-3 minutes until fragrant.
- Pour in the vegetable broth and bring to a gentle simmer. Carefully add the prepared meatballs to the simmering broth.
- Reduce heat to low, cover, and simmer for 35-40 minutes, or until the rice in the meatballs is cooked and the flavors have melded. Stir occasionally.
- Garnish with the remaining fresh parsley and serve hot.
