  1. Cut chicken breast into 1-inch (2.5 cm) cubes. In a large bowl, whisk together yogurt, lemon juice, minced garlic, olive oil, tomato paste, paprika, dried oregano, salt, and black pepper to create the marinade.
  2. Add the chicken cubes to the marinade, ensuring they are fully coated. Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.

  4. Grill the shish taouk for 10-15 minutes, turning occasionally, until the chicken is cooked through, golden brown, and slightly charred. Ensure the internal temperature reaches 74°C (165°F).
  5. Remove from the grill and let rest for a few minutes before serving. Shish Taouk is traditionally served with pita bread, garlic sauce (toum), and a side salad or pickles.
