- Season chicken breasts with salt and pepper. In a large pot or Dutch oven, heat olive oil over medium-high heat and sear the chicken on all sides until lightly browned.
- Add diced yellow onion and minced garlic to the pot, cooking until softened, about 3-5 minutes. Stir in canned diced tomatoes, chipotle in adobo sauce, and chicken broth.
