👨🍳 Instructions
- Cut the whole chicken into 8-10 pieces; wash and pat dry. In a large bowl, combine chicken, potato wedges, onion slices, minced garlic, olive oil, lemon juice, sumac, allspice, black pepper, and salt.
- Mix everything thoroughly with your hands, ensuring all chicken and vegetables are well coated. Let it marinate for at least 30 minutes, or ideally, 2-4 hours in the refrigerator.
- Preheat your oven to 200°C (400°F). Spread the marinated chicken and vegetables evenly in a large baking tray.
- Add about 1/2 to 1 cup of water or chicken broth to the tray, covering the bottom with liquid. Cover the tray tightly with aluminum foil.
- Bake for 45-50 minutes, then remove the foil and continue baking for another 20-25 minutes, or until the chicken is golden brown and cooked through and the potatoes are tender.
- Serve hot with rice or flatbread, garnished with fresh parsley if desired.
