👨‍🍳 Instructions

  1. Cut the whole chicken into 8-10 pieces; wash and pat dry. In a large bowl, combine chicken, potato wedges, onion slices, minced garlic, olive oil, lemon juice, sumac, allspice, black pepper, and salt.
  2. Mix everything thoroughly with your hands, ensuring all chicken and vegetables are well coated. Let it marinate for at least 30 minutes, or ideally, 2-4 hours in the refrigerator.
  3. Preheat your oven to 200°C (400°F). Spread the marinated chicken and vegetables evenly in a large baking tray.
  4. Add about 1/2 to 1 cup of water or chicken broth to the tray, covering the bottom with liquid. Cover the tray tightly with aluminum foil.
  5. Bake for 45-50 minutes, then remove the foil and continue baking for another 20-25 minutes, or until the chicken is golden brown and cooked through and the potatoes are tender.
  6. Serve hot with rice or flatbread, garnished with fresh parsley if desired.
