👨🍳 Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add sliced smoked sausage and cook until lightly browned, about 5-7 minutes. Remove sausage and set aside.
- Add chopped onion, carrots, and celery to the pot. Sauté for 5-7 minutes until vegetables start to soften. Stir in minced garlic and cook for another minute until fragrant.
- Return the smoked sausage to the pot. Add diced potatoes, canned diced tomatoes (undrained), chicken broth, bay leaf, and a pinch of dried thyme. Stir well.
- Bring the stew to a boil, then reduce heat to low, cover, and simmer for 30-40 minutes, or until potatoes are tender. Remove the bay leaf before serving.
- Season with salt and black pepper to taste. Ladle hot stew into bowls and serve immediately, optionally garnished with fresh parsley.
