👨‍🍳 Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add sliced smoked sausage and cook until lightly browned, about 5-7 minutes. Remove sausage and set aside.
  2. Add chopped onion, carrots, and celery to the pot. Sauté for 5-7 minutes until vegetables start to soften. Stir in minced garlic and cook for another minute until fragrant.
  3. Return the smoked sausage to the pot. Add diced potatoes, canned diced tomatoes (undrained), chicken broth, bay leaf, and a pinch of dried thyme. Stir well.
  4. Bring the stew to a boil, then reduce heat to low, cover, and simmer for 30-40 minutes, or until potatoes are tender. Remove the bay leaf before serving.
  5. Season with salt and black pepper to taste. Ladle hot stew into bowls and serve immediately, optionally garnished with fresh parsley.
