👨‍🍳 Instructions

  1. Cut pork shoulder into 1-inch (2.5 cm) cubes. In a bowl, combine the pork with 5g garlic (minced), 5g olive oil, 15g lemon juice, 2g dried oregano, and a pinch of salt and pepper. Marinate for at least 30 minutes, or ideally 2-4 hours in the refrigerator.
  2. While the pork marinates, prepare the tzatziki sauce. Grate 30g cucumber and squeeze out excess water. In a small bowl, combine 50g plain Greek yogurt with 5g minced garlic, 2g fresh dill (chopped), a drizzle of olive oil, and a pinch of salt.
  3. Thread the marinated pork onto skewers. Grill over medium-high heat for 8-12 minutes, turning occasionally, until cooked through and slightly charred.
  4. Warm the pita bread in a dry pan, on the grill, or in the microwave for about 30 seconds until soft and pliable.
  5. To assemble, spread a generous spoonful of tzatziki onto the warm pita. Place the grilled pork (removed from the skewer), sliced tomatoes, and sliced red onion on top. Fold the pita around the fillings and enjoy immediately.
