👨🍳 Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and sauté until softened, about 5-7 minutes.
- Add minced garlic and cook for another minute until fragrant. Then, add the fresh spinach in batches, stirring until completely wilted.
- Stir in the short-grain rice, coating it with the oil and vegetables. Pour in the vegetable broth, add the chopped dill and parsley, and season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot tightly, and simmer for 20-25 minutes, or until the rice is tender and most of the liquid has been absorbed.
