  1. In a large bowl, combine flour, eggs, water, and 2g of salt. Mix vigorously with a wooden spoon until a smooth, thick, yet slightly sticky batter forms. Beat the batter until it develops air bubbles, about 5-10 minutes.
  2. Let the dough rest at room temperature for about 10-15 minutes to allow the flour to fully hydrate.
  3. Bring a large pot of salted water to a rolling boil. Use a Spätzle maker or a colander with large holes to press or scrape small pieces of dough directly into the boiling water.
  4. Cook for 2-3 minutes or until the Spätzle float to the surface. Remove with a slotted spoon and transfer to a bowl of cold water to stop the cooking, then drain well.
  5. In a large skillet, melt the butter over medium heat. Add the drained Spätzle and sauté for 3-5 minutes until lightly golden and heated through. Serve immediately as a side dish or with your favorite sauce/gravy.
