👨🍳 Instructions
- Pat the beef stew meat dry with paper towels and season generously with salt and black pepper.
- Heat olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat, then brown the beef in batches on all sides; remove and set aside.
- Add chopped onion, carrots, and celery to the pot, sautéing for 5-7 minutes until softened.
- Stir in minced garlic and cook for another minute until fragrant.
- Pour in the red wine, scraping up any browned bits from the bottom of the pot; let it simmer for 2-3 minutes to reduce slightly.
- Return the beef to the pot, then add the crushed tomatoes, beef broth, and fresh rosemary sprig.
- Bring to a simmer, then reduce heat to low, cover, and cook for 2 to 2.5 hours, or until the beef is fork-tender, stirring occasionally.
- Remove the rosemary sprig before serving. Taste and adjust seasoning if needed. Serve hot, traditionally with polenta or crusty bread.
