👨‍🍳 Instructions

  1. Cook spaghetti noodles according to package directions until al dente; reserve about 1/4 cup of the cooking water, then drain and set aside.
  2. While noodles cook, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, chili garlic sauce, maple syrup, grated ginger, minced garlic, and water in a medium bowl until smooth.
  3. If the sauce is too thick, gradually add some of the reserved noodle water, one tablespoon at a time, until it reaches your desired consistency.
  4. Add the cooked and drained noodles to the bowl with the peanut sauce; toss gently to coat all the noodles evenly.
  5. Garnish with sliced green onions and crushed peanuts before serving. Serve immediately, or chill for a cold noodle salad.
