👨🍳 Instructions
- Cook spaghetti noodles according to package directions until al dente; reserve about 1/4 cup of the cooking water, then drain and set aside.
- While noodles cook, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, chili garlic sauce, maple syrup, grated ginger, minced garlic, and water in a medium bowl until smooth.
- If the sauce is too thick, gradually add some of the reserved noodle water, one tablespoon at a time, until it reaches your desired consistency.
- Add the cooked and drained noodles to the bowl with the peanut sauce; toss gently to coat all the noodles evenly.
- Garnish with sliced green onions and crushed peanuts before serving. Serve immediately, or chill for a cold noodle salad.
