👨‍🍳 Instructions

  1. Cut chicken breast into 1-inch (2.5 cm) cubes. In a large bowl, whisk together olive oil, white vinegar, minced garlic, dried oregano, chopped fresh mint, lemon juice, and chopped fresh parsley. Season generously with salt and black pepper.
  2. Add the chicken cubes to the marinade, ensuring all pieces are well coated. Cover the bowl and refrigerate for a minimum of 12 hours, ideally 24-48 hours, allowing the flavors to fully develop.
  3. Thread the marinated chicken cubes onto skewers. Preheat a grill to medium-high heat, or use a broiler or grill pan.
  4. Grill the spiedies for 4-6 minutes per side, turning occasionally, until the chicken is cooked through and has a nice char. The internal temperature should reach 165°F (74°C).
  5. Remove the cooked chicken from the skewers and serve immediately on a fresh Italian bread roll. You can add extra marinade (warmed) or simply enjoy as is.
