  • Beef tenderloin (or sirloin), very lean, finely minced 150 g · 170 kcal

👨‍🍳 Instructions

  1. Finely dice the beef by hand into small cubes (about 2-3 mm). Place it in a chilled bowl and refrigerate immediately to keep it cold.
  2. Finely mince the shallots, capers, and cornichons.
  3. In the chilled bowl with the beef, add the minced shallots, capers, cornichons, Dijon mustard, Worcestershire sauce, Tabasco, olive oil, and season generously with salt and freshly ground black pepper.
