👨‍🍳 Instructions

  1. Preheat your oven to 200°C (400°F). Carefully cut the acorn squash in half lengthwise and scoop out the seeds and stringy bits.
  2. Lightly brush the cut sides of the squash with half of the olive oil, then season with a pinch of salt and pepper. Place them cut-side down on a baking sheet and bake for 20-25 minutes until slightly tender.
  3. While the squash bakes, heat the remaining olive oil in a large skillet over medium heat. Add the ground turkey and cook, breaking it up with a spoon, until browned.
  4. Add the diced onion and apple to the skillet with the turkey and continue to cook for 5-7 minutes until softened. Stir in the dried sage and thyme.
  5. Stir in the breadcrumbs and chicken broth, mixing well to combine. The mixture should be moist but not soggy.
  6. Flip the partially baked squash halves cut-side up. Generously spoon the turkey and apple mixture into each squash half.
  7. Return the stuffed squash to the oven and bake for another 25-30 minutes, or until the squash is very tender and the filling is heated through and lightly browned on top. Serve immediately.
