Stuffed Acorn Squash

- Acorn Squash 200 g · 80 kcal
- Ground Turkey 100 g · 170 kcal
- Yellow Onion 50 g · 20 kcal
- Apple 50 g · 25 kcal
- Plain Breadcrumbs 20 g · 75 kcal
- Chicken Broth 30 g · 5 kcal
- Olive Oil 5 g · 45 kcal
- Dried Sage 1 g · 0 kcal
- Dried Thyme 1 g · 0 kcal
👨🍳 Instructions
- Preheat your oven to 200°C (400°F). Carefully cut the acorn squash in half lengthwise and scoop out the seeds and stringy bits.
- Lightly brush the cut sides of the squash with half of the olive oil, then season with a pinch of salt and pepper. Place them cut-side down on a baking sheet and bake for 20-25 minutes until slightly tender.
- While the squash bakes, heat the remaining olive oil in a large skillet over medium heat. Add the ground turkey and cook, breaking it up with a spoon, until browned.
- Add the diced onion and apple to the skillet with the turkey and continue to cook for 5-7 minutes until softened. Stir in the dried sage and thyme.
- Stir in the breadcrumbs and chicken broth, mixing well to combine. The mixture should be moist but not soggy.
- Flip the partially baked squash halves cut-side up. Generously spoon the turkey and apple mixture into each squash half.
- Return the stuffed squash to the oven and bake for another 25-30 minutes, or until the squash is very tender and the filling is heated through and lightly browned on top. Serve immediately.
