👨🍳 Instructions
- Preheat oven to 190°C (375°F). Slice bell peppers in half lengthwise and remove seeds and membranes.
- Heat olive oil in a large skillet over medium heat. Sauté chopped onion and garlic until softened, about 5-7 minutes.
- Add ground beef to the skillet and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Stir in diced tomatoes, tomato paste, cooked rice, salt, and black pepper. Mix well to combine all ingredients for the filling.
- Place pepper halves in a baking dish. Fill each pepper half generously with the beef and rice mixture.
- Pour beef broth around the peppers in the baking dish. Cover the dish with foil.
- Bake for 35-40 minutes. Remove foil and bake for another 10-15 minutes, or until peppers are tender and filling is lightly browned.
- Serve hot, garnished with fresh parsley if desired.
