Stuffed Bell Peppers (Peperoni Ripieni)

👨🍳 Instructions
- Preheat oven to 190°C (375°F). Halve the bell peppers lengthwise and remove seeds and membranes. Lightly grease a baking dish.
- In a large skillet, heat olive oil over medium heat. Sauté chopped onion for 3-5 minutes until softened, then add minced garlic and cook for another minute until fragrant.
- Add ground beef to the skillet and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Stir in uncooked rice, diced tomatoes, tomato paste, chopped parsley, Parmesan cheese, and breadcrumbs. Season with salt and pepper to taste.
- Carefully stuff each bell pepper half with the meat and rice mixture, mounding it slightly. Arrange the stuffed peppers in the prepared baking dish.
- Bake for 45-55 minutes, or until the peppers are tender and the filling is cooked through and lightly browned on top. Serve hot.
