👨🍳 Instructions
- Wash bitter gourds, peel lightly, make a slit lengthwise and carefully scoop out the seeds and inner pulp. Rub with salt and let sit for 30 minutes to reduce bitterness, then rinse thoroughly.
- Heat half the oil in a pan, add chopped onion and sauté until translucent. Add ginger-garlic paste and green chilies, cook for a minute.
- Add minced lamb and cook until browned, breaking up any lumps. Stir in coriander, cumin, turmeric, red chili powder, and a pinch of salt.
- Add chopped tomatoes and cook until they soften and the mixture thickens. Remove from heat and let the filling cool slightly.
- Carefully stuff the bitter gourds with the prepared minced lamb filling. Use toothpicks to seal the opening if needed.
- In a large heavy-bottomed pot, heat the remaining oil. Gently place the stuffed bitter gourds in the pot.
- Pour about a cup of water into the pot, ensuring it covers about half of the gourds. Bring to a simmer, then reduce heat to low, cover, and cook for 45-60 minutes, or until gourds are tender.
- Serve hot, garnished with fresh cilantro.
