👨‍🍳 Instructions

  1. Preheat oven to 200°C (400°F). Halve zucchinis lengthwise and scoop out the pulp, leaving a 1/2-inch border; finely chop the scooped pulp.
  2. Heat olive oil in a pan over medium heat. Sauté chopped onion for 3-4 minutes until softened, then add minced garlic and cook for 1 minute until fragrant.
  3. Add ground beef to the pan and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  4. Stir in the chopped zucchini pulp and tomato paste. Cook for 5-7 minutes until the zucchini pulp softens, then season with salt and pepper to taste.
  5. Place the hollowed zucchini halves in a baking dish. Fill each half generously with the meat mixture.
  6. Sprinkle the grated Parmesan cheese over the stuffed zucchini boats. Bake for 30-35 minutes, or until zucchini is tender and cheese is golden and bubbly.
  7. Garnish with fresh parsley before serving. Serve hot.
