👨‍🍳 Instructions

  1. Wash the rice thoroughly until the water runs clear; drain and let it sit for 30 minutes to an hour.
  2. Dice the chicken, thinly slice the carrot and shiitake mushrooms, and cut the aburaage into thin strips.
  3. In a pot or rice cooker, combine the drained rice, chicken, carrots, shiitake, aburaage, dashi stock, soy sauce, mirin, and sake.
  4. Stir gently to combine, then cook using your rice cooker's regular white rice setting, or on the stovetop (bring to boil, simmer 15 mins, rest 10 mins).
  5. Once cooked, let it rest for 5-10 minutes, then fluff gently with a rice paddle before serving.
