👨🍳 Instructions
- Cook spaghetti according to package directions; drain and set aside.
- In a pan, heat vegetable oil over medium heat and sauté the diced red onion and minced garlic until fragrant, about 3-5 minutes.
- Add aji amarillo paste to the sautéed mixture and cook for 2-3 minutes, stirring constantly.
- Transfer the sautéed mixture to a blender. Add queso fresco, evaporated milk, and saltine crackers. Blend until smooth and creamy.
- Return the huancaína sauce to the pan and gently heat through for a few minutes, stirring. Season with salt to taste.
