👨🍳 Instructions
- In a bowl, mix the dried tarhana with a small amount of cold water until a smooth paste forms; set aside.
- In a pot, melt the butter over medium heat, then add the tomato paste and sauté for 1-2 minutes until fragrant.
- Add the remaining water to the pot and bring it to a boil, stirring occasionally.
- Once boiling, gradually whisk in the tarhana paste, stirring continuously to prevent lumps.
- Reduce heat, add the dried mint and red pepper flakes, then simmer for 10-15 minutes, stirring frequently until the soup thickens slightly.
- Add the small vermicelli noodles and cook for another 5-7 minutes, or until the noodles are tender.
- Serve hot, optionally garnished with extra mint or pepper flakes.
