👨‍🍳 Instructions

  1. In a bowl, mix the dried tarhana with a small amount of cold water until a smooth paste forms; set aside.
  2. In a pot, melt the butter over medium heat, then add the tomato paste and sauté for 1-2 minutes until fragrant.
  3. Add the remaining water to the pot and bring it to a boil, stirring occasionally.
  4. Once boiling, gradually whisk in the tarhana paste, stirring continuously to prevent lumps.
  5. Reduce heat, add the dried mint and red pepper flakes, then simmer for 10-15 minutes, stirring frequently until the soup thickens slightly.
  6. Add the small vermicelli noodles and cook for another 5-7 minutes, or until the noodles are tender.
  7. Serve hot, optionally garnished with extra mint or pepper flakes.
