👨🍳 Instructions
- Cut chicken breast into bite-sized pieces; slice bell pepper and eggplant. Prepare bamboo shoots by draining them.
- Heat cooking oil in a large pot or wok over medium heat. Add green curry paste and stir-fry for 1-2 minutes until fragrant.
- Add chicken pieces and cook until lightly browned. Pour in about half of the coconut milk and stir well, scraping the bottom of the pot.
- Bring to a simmer, then add the remaining coconut milk, fish sauce, palm sugar, and kaffir lime leaves. Stir until the sugar dissolves.
- Add the bamboo shoots, Thai eggplant, and red bell pepper. Simmer for 10-15 minutes, or until the chicken is cooked through and vegetables are tender-crisp.
- Stir in the fresh Thai basil leaves just before serving. Remove kaffir lime leaves before serving if desired.
