👨🍳 Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned, about 5-7 minutes; drain any excess fat.
- Add chopped onion, carrot, and celery (the soffritto) to the pot. Sauté for 8-10 minutes until vegetables soften, then stir in minced garlic, oregano, and basil and cook for another minute until fragrant.
- Stir in tomato paste and cook for 2 minutes, then add crushed tomatoes, chicken broth, milk, bay leaf, salt, and pepper. Bring to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, or up to 1 hour, stirring occasionally.
- While the sauce simmers, cook spaghetti according to package directions until al dente. Drain well.
- Remove the bay leaf from the bolognese sauce. Serve the turkey bolognese over cooked spaghetti, garnished with grated Parmesan cheese and fresh basil, if desired.
