👨‍🍳 Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned, about 5-7 minutes; drain any excess fat.
  2. Add chopped onion, carrot, and celery (the soffritto) to the pot. Sauté for 8-10 minutes until vegetables soften, then stir in minced garlic, oregano, and basil and cook for another minute until fragrant.
  3. Stir in tomato paste and cook for 2 minutes, then add crushed tomatoes, chicken broth, milk, bay leaf, salt, and pepper. Bring to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, or up to 1 hour, stirring occasionally.
  4. While the sauce simmers, cook spaghetti according to package directions until al dente. Drain well.
  5. Remove the bay leaf from the bolognese sauce. Serve the turkey bolognese over cooked spaghetti, garnished with grated Parmesan cheese and fresh basil, if desired.
