Turkey Meatball Sub

👨🍳 Instructions
- In a large bowl, combine ground turkey, panko breadcrumbs, egg, finely diced onion, minced garlic, chopped fresh parsley, and a pinch of salt and black pepper. Mix gently until just combined, then form into 12-15 small meatballs.
- Heat olive oil in a large skillet over medium-high heat. Add the meatballs and brown them on all sides, about 5-7 minutes. You may need to do this in batches to avoid overcrowding the pan.
- Once browned, drain any excess fat from the skillet. Pour in the marinara sauce, reduce heat to low, cover, and simmer for 20-25 minutes, or until meatballs are cooked through and tender.
- Preheat your oven or broiler to 180°C (350°F) or to broil setting. Slice the sub rolls lengthwise, being careful not to cut all the way through, and lightly toast them in the oven or under the broiler until golden.
- Spoon the hot turkey meatballs and marinara sauce into the toasted sub rolls. Top generously with slices of provolone cheese. Return to the oven or broiler for 1-2 minutes, or until the cheese is melted and bubbly.
