👨🍳 Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Add diced onion, minced garlic, and diced green bell pepper to the skillet. Sauté for 5-7 minutes until the vegetables soften.
- Stir in diced potatoes, canned diced tomatoes, tomato paste, ground cumin, dried oregano, and bay leaf. Pour in chicken broth.
- Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until potatoes are tender, stirring occasionally.
- Stir in the green olives and raisins. Cook for another 5 minutes to allow flavors to meld. Remove the bay leaf before serving.
