  1. Preheat oven to 190°C (375°F). Pound turkey breast fillets to an even 1/2-inch thickness using a meat mallet between two sheets of plastic wrap. Season lightly with salt and pepper.
  2. In a skillet over medium heat, sauté chopped onion, celery, and minced garlic in 1 tablespoon of olive oil until softened, about 5-7 minutes. Remove from heat and transfer to a bowl.
  3. To the bowl, add breadcrumbs, chicken broth, fresh thyme, sage, and parsley. Mix well to combine, ensuring the stuffing is moist but not soggy. Season the stuffing with salt and pepper to taste.
  4. Spread the stuffing evenly over the pounded turkey breast, leaving a 1-inch border on all sides. Tightly roll the turkey breast from one long end to the other, encasing the stuffing.
  5. Secure the roulade with kitchen twine at 1-inch intervals. Heat the remaining olive oil in an oven-safe skillet over medium-high heat. Sear the roulade on all sides until golden brown.
  6. Transfer the skillet to the preheated oven and roast for 35-40 minutes, or until the internal temperature reaches 74°C (165°F). Remove from oven, tent with foil, and let rest for 10 minutes before slicing and serving.
