👨🍳 Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add turkey sausage, breaking it up slightly, and cook until browned on all sides, about 5-7 minutes. Remove sausage from the skillet and set aside, leaving rendered fat in the pan.
- Add sliced bell peppers and onion to the skillet. Sauté for 8-10 minutes, stirring occasionally, until vegetables begin to soften and lightly brown.
- Stir in minced garlic and Italian seasoning; cook for 1 minute until fragrant. Pour in the crushed tomatoes and return the cooked turkey sausage to the skillet.
- Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 10-15 minutes, allowing the flavors to meld. Stir occasionally.
- Remove from heat, garnish with fresh chopped parsley, and serve hot. This dish is excellent on its own, with crusty bread, or over pasta or rice.
