👨‍🍳 Instructions

  1. Preheat oven to 375°F (190°C). Halve the bell peppers lengthwise and scoop out the seeds and membranes; arrange them cut-side up in a baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 5 minutes; then add minced garlic and cook for 1 minute more until fragrant.
  3. Add ground turkey to the skillet and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
  4. Stir in the cooked rice, diced tomatoes (undrained), dried oregano, black pepper, and 1.5 teaspoons of salt into the turkey mixture. Mix well to combine.
  5. Generously spoon the turkey and rice mixture into each bell pepper half. Pour tomato sauce over the filled peppers.
  6. Cover the baking dish tightly with aluminum foil and bake for 30 minutes. Remove the foil, sprinkle with shredded mozzarella cheese, and bake uncovered for another 15 minutes, or until the cheese is melted and bubbly and peppers are tender.
