👨🍳 Instructions
- Heat olive oil in a large Dutch oven or pot over medium-high heat. Add diced vegan sausage and cook until lightly browned, about 5-7 minutes. Remove sausage and set aside.
- Add onion, celery, red bell pepper, and green bell pepper to the pot; cook until vegetables soften, about 8-10 minutes. Stir in minced garlic, smoked paprika, dried thyme, dried oregano, and cayenne pepper, cooking for another minute until fragrant.
- Stir in the diced tomatoes, vegetable broth, and bay leaves. Bring the mixture to a simmer.
- Add the uncooked rice and kidney beans. Bring back to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until the rice is tender and most of the liquid has been absorbed.
- Once the rice is cooked, remove the bay leaves, then gently stir in the reserved vegan sausage. Fluff with a fork and let stand for 5 minutes before serving.
- Garnish with fresh chopped parsley before serving.
