  1. Rinse the rice thoroughly under cold water until the water runs clear; drain well and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat, then add the broken vermicelli.
  3. Cook the vermicelli, stirring constantly, until it turns golden brown, about 3-5 minutes.
  4. Add the rinsed and drained rice to the saucepan with the vermicelli and stir for about one minute to coat the grains.
  5. Pour in the water (or broth) and add salt to taste, bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan tightly, and simmer for 15-18 minutes, or until all the liquid is absorbed and the rice is tender.
