  1. Cook spaghetti according to package directions in salted water until al dente; reserve about 1/2 cup of pasta water before draining.
  2. Meanwhile, heat olive oil in a large skillet over medium-high heat. Add bacon and cook until crispy, then remove bacon and set aside, leaving rendered fat in the pan.
  3. Add minced garlic and mushrooms to the pan with bacon fat; sauté for 3-5 minutes until mushrooms are softened and lightly browned.
  4. Deglaze the pan with sake and mirin, scraping up any browned bits from the bottom. Stir in soy sauce and black pepper.
  5. Add the cooked spaghetti, reserved pasta water, and butter to the skillet. Toss everything together until the pasta is well coated and the sauce emulsifies into a glossy consistency.
  6. Return the crispy bacon to the skillet and toss briefly. Serve immediately, garnished with sliced green onions and kizami nori.
