👨🍳 Instructions
- Cook spaghetti according to package directions in salted water until al dente; reserve about 1/2 cup of pasta water before draining.
- Meanwhile, heat olive oil in a large skillet over medium-high heat. Add bacon and cook until crispy, then remove bacon and set aside, leaving rendered fat in the pan.
- Add minced garlic and mushrooms to the pan with bacon fat; sauté for 3-5 minutes until mushrooms are softened and lightly browned.
- Deglaze the pan with sake and mirin, scraping up any browned bits from the bottom. Stir in soy sauce and black pepper.
- Add the cooked spaghetti, reserved pasta water, and butter to the skillet. Toss everything together until the pasta is well coated and the sauce emulsifies into a glossy consistency.
- Return the crispy bacon to the skillet and toss briefly. Serve immediately, garnished with sliced green onions and kizami nori.
