👨‍🍳 Instructions

  1. Rinse the wild rice thoroughly under cold water; set aside. Dice the onion and celery, and slice the mushrooms.
  2. Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and celery, cooking until softened, about 5-7 minutes.
  3. Add the sliced mushrooms and dried thyme to the pot, cooking for another 3-5 minutes until the mushrooms release their liquid and start to brown.
  4. Stir in the rinsed wild rice. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 40-45 minutes, or until the rice is tender and has absorbed most of the liquid.
  5. Remove from heat and let stand, covered, for 5-10 minutes. Fluff with a fork before serving. Season with salt and pepper to taste.
