👨🍳 Instructions
- Prepare ingredients: Wash pork ribs, blanch in boiling water for 5 minutes, then rinse thoroughly. Peel the winter melon and cut it into large chunks. Rinse dried shrimp and goji berries.
- Combine ingredients: Place the blanched pork ribs, winter melon chunks, dried shrimp, and ginger slices into a large pot.
- Add water: Pour enough water to cover all ingredients by several inches (approximately 1.5 liters for 4 servings).
- Simmer: Bring to a boil, then reduce heat to low, cover, and simmer for 45-60 minutes, or until winter melon is tender and ribs are cooked through.
- Add goji berries and season: Add the goji berries during the last 10-15 minutes of simmering. Season generously with salt to taste.
- Serve: Ladle the hot soup into bowls. Garnish with chopped green onions (optional) and serve immediately.
