  1. Peel and devein the shrimp, then butterfly each shrimp by slicing almost all the way through lengthwise, leaving it connected at the back. Rinse thoroughly and pat dry, then place them in a shallow dish.
  2. In a blender, combine lime juice, serrano peppers (remove stems and some seeds for less heat), and fresh cilantro. Blend until smooth, then taste and season with salt.
  3. Pour the aguachile marinade over the butterflied shrimp, ensuring all pieces are submerged. Let it marinate in the refrigerator for 20-25 minutes, or until the shrimp turn opaque pink.
  4. Thinly slice the red onion and cucumber. Once the shrimp are cured, arrange them on a serving plate with the sliced red onion and cucumber.
  5. Pour the remaining aguachile marinade over the assembled dish. Garnish with additional cilantro and serve immediately, optionally with tostadas or tortilla chips.
