👨🍳 Instructions
- Heat olive oil in a large paella pan or wide shallow pot over medium-high heat. Add chopped onion and bell pepper, sauté until softened, about 5-7 minutes.
- Add minced garlic and cook for 1 minute until fragrant. Stir in the short-grain rice and toast for 2-3 minutes until translucent at the edges.
- Pour in white wine and stir, scraping up any browned bits from the bottom of the pan. Let it simmer until the wine has almost completely evaporated.
- Add crushed tomatoes and saffron threads, stir well. Pour in the seafood broth, bring to a simmer, then reduce heat to low.
- Cover and cook for 15-20 minutes, or until the rice has absorbed most of the liquid and is almost tender. Avoid stirring too much.
- Arrange the shrimp, mussels, calamari, and scallops on top of the rice. Cover again and continue cooking for 5-8 minutes, or until seafood is cooked through.
- Remove from heat, cover with a clean kitchen towel and let it rest for 5 minutes before serving. Garnish with fresh parsley.
