Bajirak Kalguksu (Clam Noodle Soup)

- Fresh Kalguksu Noodles 150 g · 225 kcal
- Manila Clams (Bajirak) 50 g · 45 kcal
- Korean Zucchini (Aehobak) 50 g · 8 kcal
- Potato 50 g · 40 kcal
- Garlic, minced 6 g · 9 kcal
- Green Onion, chopped 15 g · 5 kcal
- Soy Sauce 15 g · 10 kcal
- Korean Fish Sauce 5 g · 3 kcal
- Water (for broth, infused with kelp/anchovy flavor) 400 g · 3 kcal
👨🍳 Instructions
- Clean clams by soaking them in salted water for 30 minutes, then rinse thoroughly. Prepare the broth by simmering 4 cups of water with 5g dried kelp and 10g dried anchovies for 15 minutes; remove kelp and anchovies and discard.
- Add the sliced potato and zucchini to the simmering broth and cook for 5 minutes until slightly tender. Add the fresh kalguksu noodles, minced garlic, clams, soy sauce, and fish sauce to the pot.
- Cook for another 3-5 minutes, or until noodles are tender and clams have opened. Taste and adjust seasoning if needed.
- Ladle the hot soup into serving bowls and garnish with chopped green onions. Serve immediately.
