Baked Seafood Empanadas

👨🍳 Instructions
- For the dough, combine flour, cold butter, and a pinch of salt in a food processor or a bowl. Pulse or cut in the butter until the mixture resembles coarse crumbs, then gradually add cold water, mixing until a dough forms.
- Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes while you prepare the filling.
- Heat olive oil in a large skillet over medium heat, then sauté chopped onion and bell pepper until softened, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
- Stir in tomato paste, cumin, paprika, oregano, and black pepper. Cook for 1-2 minutes to toast the spices, then pour in the white wine (or fish broth) and simmer until slightly reduced.
- Add the mixed seafood to the skillet and cook for 3-5 minutes until just cooked through. Remove from heat and stir in chopped parsley, sliced green olives, and chopped hard-boiled eggs. Let the filling cool completely.
- Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the chilled dough to about 3mm thick. Use a round cutter (about 10-12 cm in diameter) to cut out circles.
- Place a tablespoon of cooled seafood filling in the center of each dough circle. Fold the dough in half to form a crescent, then crimp the edges firmly with a fork to seal.
- Arrange the empanadas on the prepared baking sheet. Beat the egg yolk with a splash of water to create an egg wash, then brush it evenly over the top of each empanada for a golden finish.
- Bake for 20-25 minutes, or until the crust is golden brown and puffed. Let them cool slightly before serving.
