👨🍳 Instructions
- Press the extra firm tofu to remove excess water, then cut it into 1-inch cubes.
- Toss the tofu cubes with cornstarch until evenly coated, then deep-fry them in hot vegetable oil until golden brown and crispy.
- Remove the fried tofu from the oil, drain on paper towels, and set aside.
- In a bowl, whisk together soy sauce, chili garlic sauce, tomato ketchup, rice vinegar, sugar, and water to create the sauce.
- Heat a tablespoon of vegetable oil in a wok or large frying pan over medium-high heat, then add minced garlic, grated ginger, and chopped green chilies.
- Sauté for about 30 seconds until fragrant, then add diced onion, red bell pepper, and green bell pepper.
- Stir-fry the vegetables for 2-3 minutes until they are slightly tender-crisp.
- Pour in the prepared sauce, bring it to a simmer, and cook for 1-2 minutes until it thickens slightly.
- Add the fried tofu to the wok and gently toss to ensure all pieces are evenly coated with the sauce.
- Serve the Chilli Tofu hot, garnished with freshly chopped spring onions, ideally with steamed rice.
