  1. Melt butter in a large pot or Dutch oven over medium heat, then add finely chopped shallot, celery, and carrot. Sauté for 5-7 minutes until softened, stirring occasionally.
  2. Stir in tomato paste and flour, cooking for 1-2 minutes to create a roux. Deglaze the pot with dry sherry, scraping up any browned bits from the bottom.
  3. Pour in the fish stock, bring to a simmer, and cook for about 15 minutes, stirring occasionally, until the bisque base slightly thickens.
  4. Carefully transfer the bisque base to a blender and blend until completely smooth. Return the puréed bisque to the pot.
