👨‍🍳 Instructions

  1. Press extra-firm tofu for at least 30 minutes to remove excess water, then cut into 1-inch cubes. Toss the tofu cubes with cornstarch until evenly coated.
  2. Heat vegetable oil in a large wok or skillet over medium-high heat. Fry the tofu cubes in batches until golden brown and crispy on all sides, then remove and set aside.
  3. In a bowl, whisk together soy sauce, rice vinegar, granulated sugar, hoisin sauce, sesame oil, and cornstarch (for sauce) with 60g of water or vegetable broth to create the sauce.
  4. Drain all but 1 tablespoon of oil from the wok. Add minced garlic, grated ginger, and dried red chilies, stir-frying for 30 seconds until fragrant.
  5. Pour the prepared sauce into the wok and bring to a simmer, stirring constantly until it thickens. Add the steamed broccoli florets and cooked tofu cubes, tossing to coat evenly.
  6. Serve immediately, garnished with sliced green onions, optionally with steamed rice.
