👨🍳 Instructions
- Press extra-firm tofu for at least 30 minutes to remove excess water, then cut into 1-inch cubes. Toss the tofu cubes with cornstarch until evenly coated.
- Heat vegetable oil in a large wok or skillet over medium-high heat. Fry the tofu cubes in batches until golden brown and crispy on all sides, then remove and set aside.
- In a bowl, whisk together soy sauce, rice vinegar, granulated sugar, hoisin sauce, sesame oil, and cornstarch (for sauce) with 60g of water or vegetable broth to create the sauce.
- Drain all but 1 tablespoon of oil from the wok. Add minced garlic, grated ginger, and dried red chilies, stir-frying for 30 seconds until fragrant.
- Pour the prepared sauce into the wok and bring to a simmer, stirring constantly until it thickens. Add the steamed broccoli florets and cooked tofu cubes, tossing to coat evenly.
- Serve immediately, garnished with sliced green onions, optionally with steamed rice.
