👨🍳 Instructions
- Press extra-firm tofu for at least 20-30 minutes to remove excess water, then slice it into 1-inch cubes or rectangular slabs.
- In a large non-stick pan, heat a small amount of vegetable oil over medium-high heat. Pan-fry the tofu until golden brown and crispy on all sides, then set aside.
- Finely mince the fresh ginger and thinly slice the scallions (both white and green parts) into small rounds or julienne.
- In a heatproof bowl, combine the minced ginger, sliced scallions, soy sauce, and toasted sesame oil.
- Heat the remaining vegetable oil in a small saucepan over high heat until it just begins to smoke (shimmering hot).
- Carefully pour the hot oil directly over the ginger-scallion mixture in the bowl. It will sizzle vigorously, releasing an aromatic fragrance.
- Stir the sauce gently to combine, then spoon generously over the pan-fried tofu. Serve immediately, optionally garnished with extra scallions.
