👨‍🍳 Instructions

  1. Press extra-firm tofu for at least 20-30 minutes to remove excess water, then slice it into 1-inch cubes or rectangular slabs.
  2. In a large non-stick pan, heat a small amount of vegetable oil over medium-high heat. Pan-fry the tofu until golden brown and crispy on all sides, then set aside.
  3. Finely mince the fresh ginger and thinly slice the scallions (both white and green parts) into small rounds or julienne.
  4. In a heatproof bowl, combine the minced ginger, sliced scallions, soy sauce, and toasted sesame oil.
  5. Heat the remaining vegetable oil in a small saucepan over high heat until it just begins to smoke (shimmering hot).
  6. Carefully pour the hot oil directly over the ginger-scallion mixture in the bowl. It will sizzle vigorously, releasing an aromatic fragrance.
  7. Stir the sauce gently to combine, then spoon generously over the pan-fried tofu. Serve immediately, optionally garnished with extra scallions.
