👨‍🍳 Instructions

  1. Heat vegetable oil in a large wok or frying pan over medium-high heat. Add minced garlic and diced onion, stir-fry until fragrant, about 1-2 minutes.
  2. Add the shrimp and diced red bell pepper, stir-fry until the shrimp are almost cooked through, turning pink.
  3. Push ingredients to one side of the wok, add the cooked jasmine rice to the other side. Sprinkle curry powder over the rice and stir-fry for 1 minute.
  4. Combine all ingredients in the wok, then add diced pineapple, raisins, fish sauce, light soy sauce, and sugar. Stir-fry for another 2-3 minutes, ensuring everything is well combined and heated through.
  5. Stir in the raw cashew nuts. Serve immediately, garnished with fresh chopped scallions and optionally inside a hollowed-out pineapple half for presentation.
