👨‍🍳 Instructions

  1. Press the extra-firm tofu for at least 20-30 minutes to remove excess water, then cut it into 1-inch cubes.
  2. In a bowl, toss the tofu cubes with a portion of the cornstarch until evenly coated.
  3. Heat vegetable oil in a large non-stick skillet over medium-high heat. Add the coated tofu in a single layer and pan-fry until golden brown and crispy on all sides, about 5-7 minutes. Remove tofu from the skillet and set aside.
  4. In the same skillet, add the minced garlic and grated ginger, sautéing for 30 seconds until fragrant.
  5. Whisk together lemon juice, tamari, maple syrup, remaining cornstarch, and vegetable broth or water in a small bowl.
  6. Pour the sauce mixture into the skillet and bring to a simmer, stirring constantly, until it thickens to a glossy consistency.
  7. Return the crispy tofu to the skillet, tossing gently to coat all cubes evenly with the lemon sauce. Serve immediately, optionally garnished with fresh herbs.
