- Dice the bacon and cook in a large pot or Dutch oven over medium heat until crispy; remove bacon bits and set aside, leaving rendered fat in the pot.
- Add diced onions, carrots, and celery to the pot with the bacon fat; sauté for about 5-7 minutes until vegetables soften.
- Stir in minced garlic and cook for another minute until fragrant.
