👨🍳 Instructions
- Prepare all seafood: ensure shrimp are peeled and deveined, calamari cleaned and cut into rings, mussels and clams thoroughly scrubbed and de-bearded, and fish fillet cut into bite-sized pieces.
- Heat olive oil in a large pan or skillet over medium-high heat. Add minced garlic and sauté for 30 seconds until fragrant, being careful not to burn it.
- Add the fish fillet and calamari rings to the pan, cook for 2-3 minutes until lightly seared, then add the shrimp and cherry tomatoes, cooking for another 2 minutes.
- Pour in the dry white wine, add the mussel and clam meat, cover the pan, and cook for 3-5 minutes until the mussels and clams open and the shrimp are pink and opaque.
- Remove from heat, stir in fresh chopped parsley and a squeeze of lemon juice. Serve immediately with extra lemon wedges.
